~ What you will need ~

  • 2 tsp butter
  • 1 tbsp raw honey
  • 2 tsp Turmeric
  • 1 1/2 tsp cumin seeds
  • 1 tbsp freshly squeezed lemon juice
  • 1/8 tsp all-spice
  • 2 1/2 cups chicken or vegetable stock
  • 1 cup organic, yellow onion, chopped
  • 1 pound organic carrots, diced
  • 2 garlic cloves, minced
  • Fresh cracked black pepper – add to your taste
  • Salt – add to taste
  • 1/2 cup yogurt, sour cream or crème fraishe
  • Parsley leaf and chopped chives as a garnish

~ How to prepare ~

  1. In a large saucepan, melt the butter over medium heat
  2. Add in the onion and saute for two minutes
  3. Mix in the broth and then the carrots
  4. Bring to a boil, then cover and let simmer for 20 minutes or until the carrots are extremely soft
  5. In a separate skillet, heat the cumin seeds over a medium heat for about five minutes
  6. Grind the warm, fragrant cumin seeds ion a spice mill and keep aside for now
  7. Take the soup off of the heat and let cool for a few minutes
  8. Puree the soup in a blender until it is smooth
  9. Return the soup to the saucepan and whisk in the all-spice, honey and lemon juice
  10. Season with black pepper and salt
  11. Ladle soup into bowls
  12. Sprinkle with the toasted cumin
  13. Add a dolup of yogart, sour cream or crème fraishe
  14. Sprinke with chopped chives if desired
